It is an early harvest extra virgin olive oil with characteristics of robustness, green freshness, and distinctly herbaceous and tomato notes, which experts suggest pairing with:

  1. Rustic green leaf salads and tomato-based dishes: Experts agree that oils with notes of freshly cut grass, tomato, or artichoke exponentially enhance the freshness of salads with leafy greens that have a character of their own (such as arugula, lamb's lettuce, watercress, or mixed greens), harmonizing with their natural herbaceous notes. It also resonates unsurpassed with a traditional tomato and basil salad or adds complexity and depth to typical cold dishes like gazpacho and salmorejo, directly enhancing the main ingredient.

  2. Fresh bread and toast: A drizzle of raw oil over a slice of rustic white bread or heartier breads (like rye) is the recommended way by tasters to appreciate the purity of the oil.
